It’s so unbelievably easy to eat healthily whilst on holiday in Cyprus, I can’t recall how many times I had Greek or ‘village’ salad made with tomatoes, cucumber, lettuce and fetta. The difference in taste is amazing when the salad has been ripened under the Medditeranean sun, oh, the taste! Our palid salad ingredients, kept under refrigeration are put to shame!
Many times I had my salad with tahini dressing over it. Tahini dressing is made with tahini (crushed sesame seeds) garlic, lemon, salt and oil and wizzed up into a creamy dressing.
This was one salad that I had at a restaurant named after it’s owner ‘Maria’, the restaurant is in a village called Vavatsinia, only reached by climbing precariously up mountain roads in a very small hire car! Definitely not for the faint-hearted.
After our meal at ‘Maria’s’ a plate of freshly cooked ‘bourekia’ are bought out for us to finish off our meal- bourekia are small fried pastries filled with ‘anari’ or a type of Cypriot ricotta/ cottage cheese I guess. Delicious!

Anna I swear I could almost taste that salad from your description! I love the sound of that dressing, have you made it yourself? I love the shot of your family at their red check-tableclothed meal. It FEELS relaxed!

I love the simple salads and swear that you can taste the sunshine in them. I so agree that our veggies, kept in the fridge, come a poor second to those ripened under a hot sun.
