Boxed up and ready!

My daughter Leoni, the one who’s at Uni, lives in the halls there, with 6 flatmates who also love cakes! Leoni loves the Hummingbird Bakery marshmallow cupcakes and I love them too, because they’re colourful, effective and look like you’ve spent hours slaving away making them!
I made the ones above for Leoni to take to uni for her and her flat-mates.

I don’t know how small the Hummingbird people make their cupcakes, but I only ever get 7 out of a recipe which states that it makes 12.

In the recipe the cupcakes are also filled with marshmallow, I always miss this step out because I think the topping is enough marshmallow without the filling too.

I make Hummingbird Vanilla frosting to top them with.

I think I’ve made 6 new friends ;-))

These look like such fun with those pretty pastel colors. I can see why these would be a hit with your daughter and friends. I think my children would enjoy these as well since they are crazy for marshmallows.

Looovey! I make these, too, they are scruptious! And I agree about the amount of cake batter in the Hummingbird recipes, if I make 12 the cases are only half-filled. I guess they make them half filled and top up with lots of icing…? :-/Are you buying the new Hummingbird book, by the way? It's out in March, already pre-ordered to my mailbox… Maria xox
