A quick flick through my cookbooks was futile. The closest I got to it was a Bill Granger recipe mixed up with a Nigel Slater recipe!
So, how hard can it be to make up a recipe for sweet chilli chicken?
Not difficult at all as it turns out!
Plus, it was darn tasty.
Sweet Chilli Chicken (My own recipe)
Serves 3 with hearty appetites!
6 small boneless, skinless chicken thighs
1 onion, thinly sliced
1 tsp. garlic puree
1 tsp. ginger puree
half cup sweet chilli sauce
quarter cup soy sauce
1 tbsp. rice vinegar
2 tbsp. honey.
1. Heat a little vegetable oil and fry the chicken until nicely golden.
2. A few minutes before the chicken is ready, add the onions too, so that they also become golden along with the chicken.
3. Add the rest of the ingredients and simmer for about 10 minutes or so until the chicken is cooked through.
4. Serve with steaming bowls of plain Basmati rice.
