See what I’ve done there? Yes, Bircher Smoothli is my name for a cross between a smoothie and the Bircher Muesli which I’ve taken as my new favourite ever breakfast! Cool, huh?
I love my muesli, but It’s not much use if you haven’t got much time and need to have your breakfast on the run. Today, I was going to meet my friend at the shopping centre, great, I thought, I can whizz up the smoothli and drink on the way! Perfect.
And then the snow came and I turned round, not really fancying getting stuck in the snow about 15 miles from home.
But hey, there are worse places to get stuck than at the shopping centre, right?
It contains the ingredients that go into my peanut butter Bircher Muesli, all whizzed up in the blender.
Delicious.
Bircher Smoothli (Serves 1)
250ml coconut milk
half an apple, sliced into 4
1 tbsp rolled oats
1tbsp honey, maple syrup or agave
1tbsp mixed nuts
1tbsp peanut butter
1/2 tbsp flaxseed, ground
1/2 tbsp cocoa nibs
1/2 tsp bee pollen.
Just whizz everything up until smooth, along with 3 ice cubes.
Serve in a big glass, altering the consistency with more coconut milk or apple juice if it’s too thick.
Place another 2-3 ice cubes in the glass to chill it all down perfectly.
Sprinkle with a few more cocoa nibs and serve.
Or pour it into a travel cup and run!

I love the idea of coconut milk and peanut butter in a smoothie, gorgeous. I’ve never tried bee pollen – you’ve got me intrigued!
