I got the idea of rounding up my unblogged photographs on a monthly basis from my lovely friend Sarah from Aus.
Photos and recipes I’d like to share, but don’t get around to blogging, sometimes because they’ve already been blogged, or are more of an assembly job than ‘proper’ cooking or baking.
So, here we go…..for the first time on my blog…..
‘The Unblogged’ round-up; April
A few days ago I decided I need to cut my carbs, I’m still deciding how many I need to cut – just refined carbs? Some of them? Practically all of them a’la Atkins induction? Hmmmmm, whatever I finally decide, you need to know….. adore smoked salmon!! Lovely protein, awesome good fats – what’s not to like?
Smoked salmon, on a bed of fresh spinach, topped with cream cheese, lemon juice and black pepper……this was really delicious….and I only missed the bagel a teeny weeny bit 😉
April was also my eldest daughter’s birthday (pictured here with her boyfriend’s nephew, isn’t he just the cutest thing?!)
I made our favouritest chocolate cake ever – Nigella’s old fashioned chocolate cake , surrounded it with Kit-Kat chocolates, which created a kind of fence to enclose the Ferrero Rocher chocolates. Finished off with a pretty pink ribbon, I think it looks very effective! 🙂
I also made galaktopoureka for my daughter’s party – creme pat rectangles, wrapped in filo, baked, then drenched in an aromatic sugar syrup.

Here we have Nigella’s jam donut muffins, beautifully moreish, light, sugar and butter topped, jam filled muffins. Soooooo delicious!
From Nigella’s book ‘How to be a Domestic Goddess’.
Makes 6/8 muffins, how Nigella gets 12 I’ll never know….
You will need:
125ml milk
85ml corn (or other veg oil)
1 large egg
½ tsp of vanilla extract
200g self-raising flour
100g caster sugar
12 tsps strawberry jam
100 unsalted butter
150g granulated sugar
1. Preheat the oven to 190C (375F, gas mark 5, 170C Fan oven)
2. Place empty muffin cups on a baking tray or in a muffin pan.
3. Beat together the milk, oil, egg and vanilla extract and gently fold the mixture into the flour and caster sugar.
4 . Put a heaped spoonful of mixture into each cup and then a teaspoonful of jam, and then another heaped spoonful of mix.
5. Put into the oven and cook for about 20 minutes until risen.
6. melt the butter and put the granulated sugar onto a plate.
7. Roll the muffins in the butter and then in the sugar.
8. Devour with wanton abandonment! 🙂
