I was determined this month, as soon as I read about the December ‘We should cocoa’ challenge, that I would be entering. I always have such good intentions to enter, but when time is limited, as it has been lately, sometimes it’s just not possible.
So, I was really pleased to read on Chocolate log blog that this month’s added ingredient, chosen by Choclette, is orange,
because chocolate and orange together ROCK!
What could be easier than Nigella’s storecupboard chocolate and orange cake?
Basically a cake made with chocolate and most of a jar of orange marmalade!
It’s a lovely cake, because the texture is moist and fudgy (I suppose because of the marmalade) and the finished article is not sickly sweet, but has that bitter, orangey edge.
Nigella’s Storecupboard Chocolate and Orange Cake
Recipe adapted from ‘How to be a Domestic Goddess’ by Nigella Lawson.
125g unsalted butter
100g dark chocolate, broken into pieces
300g thin-cut marmalade
150g caster sugar
pinch of salt
2 lg eggs, beaten
150g self-raising flour
20cm springform tin, buttered and floured (I always line mine with baking parchment too, because this cake is moist and I’m always scared that it will stick!)
Preheat the oven to 180 deg.C (Gas mark 4)
1. Put butter in a pan, melt over low heat, stir in the chocolate, leave for a moment, take off the heat and keep stirring until butter and chocolate are both melted.
2. Add the marmalade, sugar, salt and eggs, stir with a spoon, then add the flour bit by bit.
3. Pour into tin and bake for about 50 mins.
4. Cool for 10 mins, before turning out.
