I think I’ve told you before dear readers in this post, that I just ‘don’t do’ lumpy, hot porridge, but Bircher Muesli is a different proposition altogether! I’m not good at ‘breakfast eating’, but I’m trying to get better..
I enjoy this breakfast so much and it keeps you nicely filled up for hours and hours….
3 tbsp rolled oats, soaked overnight in 4 tbsp of either water, milk or apple juice
to this, add 1 heaped tablespoon of plain yoghurt
1 grated apple
1 tbsp peanut butter
flaked almonds and walnuts, chopped
Ground flaxseed (about 1 level tbsp)
raw cocoa nibs and bee pollen to taste (a sprinkle of each)
1 tbsp of honey, maple syrup or rice malt syrup.
If I don’t use peanut butter, I also add a measure (as instructed on the tin) of flavourless protein powder and extra nuts, equally delicious!
Have I told you that raw cocoa nibs are my new favourite thing? Scrummy! And feel free to change this recipe up – it’s really just a template…add chopped banana, dried fruit, fresh fruit, seeds, wheatgerm, condensed milk as the sweetener….the possibilities are endless!
