What to do when time is short, but you really, really, really want to make a curry you’ve seen on ‘Cook yourself thin’ and in Gizzi Erskine’s cookbook?

I don’t apologize for this. Ever. Usually it happens at tea-time, when I know we all need feeding, but I also know that my shift downstairs is getting nearer and nearer……
Ok, If I’d had more time, I would have egg and breadcrumbed my own chicken breast fillets, but as I didn’t, Tesco kindly did it for me.
So, as I was making the curry sauce, I wacked the chicken into the oven, put the rice on to cook and wam! bam! 20 minutes later, dinner was ready!
And it was really, really delicious. I love it when madam says “Make this again, Mom!”
